"Actually I once was making a living out of photography. Back then I visited more than 2000 shops. I met owners, shopkeepers and part-timers, and since I can always look back to the photos, I learned from the layouts of the shops in them."

- Why did you start an Ochazuke shop?

"My family runs a Soba noodle shop in Nagano prefecture, but it didn't hit me to just make Soba. So I looked for something that's a core for me, and I came up with Ochazuke - or simply Japanese tea.

Let's try 'Kiki-cha' next time - distinguishing types of tea by sight, scent and taste. It's quite a fun. Someone who calls oneself an expert could miss, while a person who's quiet in the first place becomes talkative once he knows the answer - saying "I knew it!".
